- Sliced almonds – 30g (optional)
For Garnish Filling (Optional):
- Heavy cream – 250ml (whipped with sugar to taste)
- Powdered sugar – To dust

Step 2: Activate the Yeast
Begin by activating the yeast to ensure your Spanish King´s Cake rises beautifully.
- Warm the milk to about 35°C (slightly above room temperature). Stir in the yeast until dissolved.
- Add 1 tablespoon of the flour and 1 tablespoon of sugar from your measured ingredients. Stir until smooth, cover with a kitchen towel, and leave it in a warm spot for 15 minutes or until bubbly.
Step 3: Mix the Dough
Combine the prepared yeast mixture with the following ingredients:
- Remaining sugar
- Orange and lemon zest
- Rum (or orange blossom water)
- Eggs
Gradually add the flour and salt while mixing. Once the mixture starts forming a dough, incorporate softened butter bit by bit. Knead it for 10-12 minutes until it becomes soft, elastic, and slightly sticky. If kneading by hand, lightly dust with flour as needed (but avoid excessive flour).

Transfer your Roscón to a baking sheet lined with parchment paper. Cover and allow it to rise again for about 45 minutes.
